Place the wild rice in a medium-sized pot with 4 cups of cold water and bring to a boil. Boil until firm-tender, about 20 minutes. Drain well and cool to room temperature. Place the rice in a salad bowl, add the remaining ingredients and toss to combine. Cover and store in the fridge until ready to serve. Toss the salad again just before serving.
