Method

Place raspberries in a fine sieve and set over a bowl. Use the back of a ladle to push the juice out of the berries into the bowl. Discard the berry pulp. Whisk remaining ingredients into the bowl. Place dressing in a tight-sealing container and refrigerate until needed.
Will keep 3 to 4 days.

Serving Suggestions

This pretty, pale pink dressing would nicely accent tender greens, such as baby mixed salad greens, spinach, leaf lettuce and butter lettuce.
The dressing would also make a nice dip for raw vegetables or grilled seafood, such as spicy prawns.
