Method

Heat the oil in a large skillet set over medium to medium-high heat. Add the onion, bell pepper and garlic and cook until softened, about 3 minutes. Add the zucchini and cherry tomatoes and sauté until the zucchini is just tender, about 3 minutes. Add your herb of choice, season with salt and pepper, and serve.
